Chocolate Sandwich Cookies

Ingredients
  • 2½ cups all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate spread (Soom Chocolate Sesame Butter or hazelnut spread)
  • ¼ cup confectioner's sugar
Instructions
  1. In a large bowl whisk together flour, baking soda and salt. Set aside.
  2. Using an electric mixer beat the butter and sugar until smooth. Add the egg and beat until fluffy, about 2 minutes. Beat in vanilla.
  3. With the mixer on low, gradually add the flour mixture, mixing until just incorporated. Shape into 2 disks, wrap in plastic and refrigerate for at least an hour.
  4. Preheat oven to 350. Working with one disk at a time, roll out dough. Using a round cookie cutter, cut out cookies and place on a greased baking sheet. Bake for 12-15 minutes. When cool, spread chocolate spread between 2 cookies, put sandwich together. Using a sifter, sprinkle with powdered sugar.
